Cilantro Lime Avocado Tuna Salad

Sometimes in life, you figure out a recipe that just works for you and tastes delicious every time. This is that recipe.

I love tuna salad, but I don’t love that it can be super caloric when you use regular mayo (AKA “sandwich lube”). A long time ago, I discovered via the internets that mashed avocado is a fabulous and more health-conscious way to create a base for your tuna salad so I’ve stuck to that for years now. I’m also naturally drawn to any dish with cilantro and lime as the heroes, so this just hits all the spots. Super simple. Super delicious. What more do you need?! INGREDIENTS:

  • 1 can of your preferred tuna

  • 1/2 large avocado or 1 1/2 of a medium or 2 tiny ones (you get the gist)

  • Enough fresh lime juice to act as a wetting agent for your mixture

  • As much fresh, chopped up cilantro as you desire

  • A sprinkle of salt, pepper, and Tajin for bite!

INSTRUCTIONS:

Mix it all up in a bowl. If it’s too dry, use a little more avocado and lime juice. Don’t be afraid to play around with it (that’s what she said). Toast an English muffin to serve it on or grab some crackers or whatever you desire. It’s just serving as a vessel to get the tuna into your mouth anyway. ENJOY!
