Low Carb Avocado Tuna Salad
As a Jewish person, I’ve loved tuna salad for a very long time. It also means that I have strong authority over whether or not a tuna salad recipe is delicious, and lemme tell ya — THIS SHIT IS DANK. I made it exactly as it calls for, but subbed in vegan mayo for regular mayo. Then I bought a bunch of collard green leaves at Whole Foods and used them as a lettuce wrap and O.M.G. New favorite, no contest.
Low Carb Avocado Tuna Salad by Peace, Love and Low Carb
INGREDIENTS:
2 – 5 oz. Cans of Tuna – Drained
1 Large Avocado – Peeled, Pitted and Cubed
1 Rib Celery – Finely Chopped
2 Cloves Garlic – Minced
3 Tbs. Mayonnaise
2 Tbs. Red Onion – Minced
2 tsp. Spicy Brown Mustard
Salt and Pepper – To Taste
1 bunch collard greens (for lettuce wrap)
DIRECTIONS:
In a large mixing bowl, combine tuna, avocado, celery, garlic, mayonnaise, red onion, mustard, salt and pepper. Mix until all ingredients are well combined the enjoy!
