Juicy Turkey Burgers with Spicy Roasted Japanese Sweet Potato Fries

Y’all ever had a Japanese sweet potato?
Well, get ready.
My best friend found this turkey burger recipe via Skinny Taste, and they are truly the JUICIEST, most incredibly tasty turkey burgers I’ve ever had (homemade or otherwise). Just be sure squeeze the SHIT out of the grated zucchini so you have no excess liquid! Also, if you can get your hands on Japanese sweet potatoes, your life will change. They’ll less sweet than their cousin, making them the perfect middle ground between sweet p fries and regular fries!

Juicy Turkey Burgers with Spicy Roasted Japanese Sweet Potato Fries
Makes 5 patties
Fries can feed 3, maybe 4
INGREDIENTS:
1 pound 93% lean ground turkey
6 oz grated zucchini (4.25oz once grated and rung out)
1 tbsp grated red onion
1-2 garlic cloves, grated
1/4 cup breadcumbs
Salt and pepper to taste
For fries:
2 Japanese sweet potatoes
1.5 tbsp olive oil
1/2 tsp chili powder
Salt and pepper to taste
DIRECTIONS:
Preheat the oven to 400º.
Slice up sweet potatoes into your desired fry lengths and sizes. Toss in a bowl with olive oil, chili powder, and salt & pepper. Place parchment paper on a baking sheet, spray lightly with cooking oil, and spread fries out evenly. Bake in the oven for 25-35 minutes.
Now, the burgers. Grate the zucchini then bundle it up into a thick wad of paper towels and squeeze the shit out of that shit. You want to get as much excess liquid out so it doesn’t mess up the integrity of your burgers. Then, grate the onion and garlic. Add it all to a big bowl, top it with the breadcrumbs and the ground turkey, sprinkle it with salt and pepper and massage the mixture so everything is super incorporated.
The mix should make 5 solid patties. Get those sorted out, then heat a skillet on high heat on the stove. Spritz it with cooking spray, then begin to cook the burgers (turn heat to low once they get their initial sear). Cook on either side for about 6 minutes each, making sure not to burn the patties.
Serve the burgers anyway you please! On a traditional bun, on Dave’s Killer Bread like I did, or in a lettuce wrap if you’re psychotic. I found I literally only needed a slice of provolone on my burger—that’s how tasty they are.
