Chicken Fried Rice with Pineapple
My mans made this last weekend for us and it. was. FUCKING. delicious. A major tip:
Add butter in the rice mixture. Makes it a bit creamier and richer.
And with that, here is a delicious, SUPER easy meal for you to throw together during the week.
Chicken Fried Rice with Pineapple
Serves 2
INGREDIENTS
1/2 cup basmati rice
1 cup water
1/8 cup cashews, roasted unsalted
1/2 lb chicken breasts
1/2 small bunch cilantro
2 cloves of garlic
1/2 small pineapple, chopped into pieces
1/2 medium red onion
Sprinkle of crushed red pepper
1 TBSP fish sauce
1/4 tsp salt
1 TBSP soy sauce
DIRECTIONS
Using a strainer or colander, rinse the rice under cold, running water, then drain and transfer to a small saucepan. Add water and bring the mixture to a boil over high heat.
Slice skin from pineapple, core, and cut into bite-sized pieces. Place in bowl for time being (you can also just buy pre-sliced pineapple).
Once the rice comes to a boil, stir, cover the saucepan, and reduce heat to low. Cook rice for 15-18 min. Once done, remove rice from heat and let it stand (still covered) for 5 minutes.
Peel and thinly slice onion into half rings. Peel and mince garlic. Wash and dry cilantro. Shave cilantro leaves off stems; discard stems and mince the leaves.
Heat skillet over medium-high heat.
Cut chicken into bite-sized pieces and season with salt.
Coat bottom of skillet with oil. Add chicken, stirring occasionally. Cook until cooked through, 2-3 min. Transfer to plate.
Return skillet to stove and add more oil. Add onion, garlic, and crushed red pepper. Stir frequently until onion is softened (2-3 min).
Uncover the rice and fluff with fork.
Add rice and fish sauce to skillet, stirring until well combined (1-2 min).
Stir in chicken, pineapple, cashews, 1/2 of cilantro, and soy sauce. Remove from heat.
Place rice in a bowl and garnish with remaining cilantro.
