Quick Meat Sauce with Bison

There is no one who loves a bolognese more than me. However, making one is time-consuming which is not usually conducive to a weeknight meal. Last week, I wanted a quick and delicious red meat sauce to put on top of a bowl containing half zoodles, half spaghetti, so I went on the hunt for that. I found this super simple, VERY tasty recipe and swapped the ground beef for ground bison (leaner! Better for you!), and it was a delight.

INGREDIENTS

  • 1 pound ground bison (90/10)

  • 6 garlic cloves minced

  • 28 ounces crushed tomatoes

  • 28 ounces diced tomatoes

  • 2 teaspoons sugar

  • 1/2 teaspoon salt plus more to taste

  • 1/2 teaspoon oregano

  • 1/2 teaspoon basil

  • 1/8 red pepper flakes

  • freshly ground black pepper to taste

INSTRUCTIONS

  • In a large dutch oven over medium heat, break up the meat. Cook until browned and no longer pink.

  • Add the garlic and sauté for 30 seconds or until fragrant.

  • Add in all tomatoes then stir in the spices and salt.

  • Bring the sauce to a simmer and cook on low for about 15 minutes or until the sauce is thickens, stirring intermittently.

  • Once finished, taste and adjust accordingly!
